Deluxe Potato Soup

This Deluxe Potato Soup recipe tastes fantastic! It is so easy to make using the Instant Pot!

 

Busy Moms will LOVE this recipe.

This recipe holds loads of flavor and will fill you. Even my 7-year-old liked it!

But this is the best; my 22-year-old son, who hates potatoes, liked it! He had 2 helpings.

When I saw him getting more, I knew it was a good-tasting soup.

The Instant Pot makes cooking so easy! This recipe is a cinch to make.

After the cooker pressurizes, the soup only has to cook for 5 minutes. 

You throw all the ingredients in, and the next time you set your eyes on them, the soup is done.

Soup always makes the kitchen smell so good, too. I love to cook with fresh onions, fresh herbs, and veggies from my garden. Many years back, I learned to enjoy seeing how many recipes I could come up with using the food I grew. It makes you feel accomplished and fulfilled using what you have. Fresh food from the garden is the best and so healthy for you!
Since it is January, there are no fresh garden picks for this recipe, but I will definitely use them in the summer.

Here is what you need:

12 Russet potatoes Cubed 

4 large carrots cut up( I chose organic because I can keep the skins on for health benefits) 

1 Medium Sweet Onion Diced

12 oz. bag of frozen green peas

12 oz. bag of frozen corn

1- 8 oz. Cream Cheese

2- 32 oz. Boxes of Beef Broth

1/4 Cup Olive Oil ( First Cold Press Virgin Olive Oil) 

1 Cup Water

1/2 tsp. salt

1/2 tsp black pepper

Topping

Sour Cream

Sharp Shredded Cheddar Cheese 

What to Do:

Put the cubed potatoes, cut-up carrots, diced onion, frozen corn, frozen peas, cubed cream cheese, and salt and pepper into the Instant Pot. 

 

Pour the 2- 32 oz. Boxes of beef broth and 1 cup water over the veggies and cream cheese. 

Add the 1/4 cup of olive oil. 

Place the lid on the pressure cooker and seal it.

Push the High-Pressure cook button and set it for 5 minutes. 

When the cooking is done, you can quickly release the pressure. 

Stir the soup to get the cream cheese clumps to dissolve and break apart more.

Once the cream cheese is how you like it, serve in bowls and top with sour cream and cheddar cheese. 

This is sure to become a family favorite for many families. Enjoy!
