Easy Chicken Soup

This is a family, tummy satisfying type of meal.

The best part is that it is very affordable!  Most families I know are looking for affordable, simple, family friendly meals.  This one fits the description!

It was super tasty with a dollop of sour cream sprinkled with shredded cheddar cheese.

The Crock-pot is my forever friend.

Is anyone with me?

I placed my 5-6 frozen, boneless, skinless chicken breast in the Crock-pot for 6 hours on high. About 3 hours into the slow cooking, I poured in the dried lentils, frozen corn, and green peas.  I added 1 cup of water for the lentils to absorb.  I left the house for a couple of hours and when I returned home I poured in two 32 oz. boxes of vegetable broth.  Lower the Crock-pot to low to finish cooking until everything is hot and to desired tenderness.  

Seasonings are so much fun to experiment with!  This recipe was bursting with flavor from tastefully simple Ultimate Steak seasoning and extra black pepper.

 

 

 

Here’s what you will need:

5-6 frozen, boneless, skinless chicken breasts

1/2 cup dried lentils

12 to 16 oz. bag of frozen corn

12-16 oz. bag of frozen green peas

1 Cup of water

2 – 32 oz. broths of your choice ( I used vegetable broth)

Flour to thicken broth ( I used whole wheat flour)

About 1-2 Tablespoons of Ultimate Steak Seasoning or seasoning mixture of your choice

Black pepper to taste
